Sardinian Tuna Salad
There are recipes that are complicated, and then there are recipes you find yourself making again and again.
This Sardinian tuna and butter bean salad falls firmly into the second category! I have shared it with so many friends this summer that I realised it deserved a place here too. It comes together in just five minutes, relies entirely on good-quality ingredients, and somehow tastes like you've put in far more effort than you actually have.
It's deliciously fresh, naturally high in protein thanks to the combination of tuna and butter beans, and perfect for a warm summer lunch or an easy dinner with a slice of crusty bread. Simple Mediterranean cooking at its best.

ngredients
150g preserved quality tuna in olive oil
300g cooked butter beans or white beans (rinsed and drained)
1 finely chopped red onion
Fresh tomatoes (cut rustically or in slices)
Fresh chili or parsley (chopped)
Extra virgin olive oil
Balsamic or white wine vinegar
Salt and black pepper
Preparation
Prep the base: Arrange sliced or chopped tomatoes on a plate or the bottom of a serving dish. Drizzle lightly with olive oil and sea salt.
Mix the main body: In a bowl, combine the drained butter beans, finely chopped red onion, and chopped chili or parsley.
Add the tuna: Add the quality tinned tuna to the bean mixture, gently breaking it down slightly while keeping nice chunks.
Dress: Pour in a generous amount of extra virgin olive oil and a splash of balsamic or white wine vinegar. Season with salt and pepper.
Combine and serve: Stir everything together carefully. Spoon the tuna and bean mixture over the prepared tomato base
