In the heart of Old Nice, just above the tightly woven streets of the historic centre, Hôtel du Couvent occupies a former 17th-century convent originally built by the Order of Saint Clare.

For centuries, it functioned as a closed world of contemplation and daily ritual. After the departure of the nuns in the 1980s, the site remained dormant for decades before being carefully restored and reimagined as a contemporary hotel while preserving its original architecture and sense of enclosure.

Rather than reinventing the site, the project follows its original logic: life organised around courtyards, gardens, shared spaces and quiet transition between indoors and outdoors.

The Space

The hotel unfolds across multiple historic layers of the convent, where thick stone walls, vaulted corridors and cloistered gardens define the movement through the property.

At its centre are Mediterranean gardens designed to be both productive and atmospheric, with herbs, vegetables and fruit integrated into the daily life of the hotel. The architecture has been restored rather than stylised, allowing the original proportions and monastic clarity of space to remain intact.

There is a strong sense of rhythm: silence in the corridors, openness in the gardens, and communal life around food and bathing spaces.

The Rooms

There are 88 rooms and suites distributed across the historic buildings and later additions.

Many retain traces of the original convent structure: stone walls, arched ceilings, and restrained proportions that reflect the building’s original purpose rather than hotel design conventions.

The interiors are deliberately understated, with natural materials, soft light, and a palette that echoes the tones of the surrounding stone and gardens. Some rooms open onto courtyards or overlook the city of Nice and the Mediterranean beyond.

Gardens, Baths & Ritual Spaces

One of the defining elements of Hôtel du Couvent is the way daily rituals are embedded into the architecture.

A network of gardens, Roman-inspired baths, movement spaces and quiet courtyards replaces the traditional hotel amenities structure. The experience is built around repetition and slowness: bathing, walking, eating, resting.

The former convent structure naturally supports this rhythm, giving the hotel a sense of continuity rather than programming.

Food & Bakery Culture

Food is central and self-contained.

Bakeries, gardens and kitchens form a closed loop, with much of the produce sourced from the hotel’s own agricultural network outside Nice. Meals are simple, seasonal and rooted in French Mediterranean tradition, served across multiple spaces rather than one central dining room.

There is a deliberate absence of formality; instead, the experience mirrors the communal nature of the building’s original life.

Hôtel du Couvent sits within walking distance of Old Nice, but feels visually and acoustically removed from it.

From the gardens, the city drops away into silence, while the surrounding hills and sea remain present in the distance. It occupies a rare position: fully embedded in the historic centre, yet structurally detached from its intensity.
